Why are Professor X and Logan dying?

Professor X is dying because he has developed crippling dementia. Because his mind is the most advanced in the world, X's dementia leads to destructive seizures (seizures which in the past have killed thousands of people). Not only that, he is a 90 year-old man in relatively poor health.

On the other hand, Logan is dying because of the adamantium in his body. The adamantium is slowly poisoning (and killing) him, causing him tremendous pain and preventing him from using his powers to the extent he had for much of his life.

How and why is Laura created?

Laura is created in an interesting (and entirely fictional process) by a company called Alkali-Transigen. Using Logan's DNA, the company impregnates a Mexican woman who eventually gives birth to Laura, who turns out to be a mutant just like the company wanted.

Laura is created for the sole purpose of becoming a soldier. In particular, the company wanted an invincible soldier who obeyed all of their commands without question. Although Laura never becomes a soldier for the company, she displays her prowess for killing throughout the film.
