gustatory epithelial cells in taste buds are stimulated by chemical substances dissolved in saliva. Several tastants are perceived and identified by the gustatory cortex of the insula, The tastes commonly identified are sweet, salty, bitter, sour, and umami . However, some researcher think there is a separate identifiable "fatty" taste. Umami taste was identified /discovered by Japanese researchers. It has been described as a beefy taste ; it is produced by a mixture of the derivatives of two amino acids, aspartate and glutamate , and is discernible in the culinary additive monosodium glutamate. Sweet taste is due to sugar or alcohols, saccharin, some amino acids, lead salts ( as in lead paints) Sour taste is due to acids (H+ ions) Bitter taste is due to alkaloids, quinine, morphine, caffeine, aspirin. Salty taste is due to sodium chloride(NaCl) and inorganic salts Umami taste produced by beef, aged cheese, aspartate, glutamate monosodium glutamate ( food additive)
