Taste receptors are chemoreceptors. They can only work when the chemicals are dissolved in solution. In our mouth, saliva acts as a solvent and dissolves the chemical present in the food so that taste receptors can bind to them and detect taste. But in a dry mouth, there is very little saliva to dissolve chemicals present in the food. Hence the sensation of taste does not work well in a dry mouth.
