Holloway says this to David after being asked why his people made David. It's an important quote because the reason Holloway is going to this planet is to find out why they made humans. David's point is that it will be soul crushing to find out that they made human, "because they could."
"Final report of the vessel Prometheus. The ship and her entire crew are gone. If you're receiving this transmission, make no attempt to come to its point of origin. There is only death here now, and I'm leaving it behind. It is New Year's Day, the year of our Lord, 2094. My name is Elisabeth Shaw, last survivor of the Prometheus. And I am still searching."
These are the final words spoken in the film by Shaw. It is a transmission to anyone who is searching for her or what is one the planet she has left. She also confirms her continued faith by naming 2094 the year of our Lord. Thus it confirms she is still venturing forth to find where she comes from and she will continue to search for why regardless of the horror she's experienced.
"Cause that's what I choose to believe. What do you believe, darling?"
David is scanning through Shaw's memories while she sleeps on their voyage to the planet. This memory in particular encapsulates the theme of faith that Shaw holds onto throughout her journey. We understand that her belief was ingrained in her by her father's teachings after her mother died and he tells her that Heaven is beautiful because that is what he chooses to believe. Thus creating in her the throughline of belief that will power her through every obstacle in her way in order to find her answers about the creation of life.
