Chapter 3 - Digestion, Absorption, and Transport - Critical Thinking Questions - Page 96: B

Answer

A gluten-free diet is very beneficial for people with celiac disease, however, although there are many people around the world who follow gluten-free diets even though they do not have the celiac disease this can lead to serious deficiencies. Avoiding gluten entirely can prevent the body from getting essential nutrients like iron, calcium, fiber, folate, thiamin, riboflavin, and niacin. For a person without celiac disease, it is probably better to avoid gluten-free diets in order to prevent any deficiencies which might arise.
