Nutrients are absorbed throughout the digestive system with the exception of the esophagus. Carbs begin to be absorbed in the mouth. Water and some water soluble nutrients are absorbed in the stomach. Proteins, fats and carbs are absorbed in the small intestine. Some minerals and vitamins are absorbed in the large intestine.
