I'm sorry, I do not see a poem entitled, "Sail" by Carol Ann Duffy. Do you have the text available?
Basically two lovers are starting their lives out together. They muse about how their love will open doors, "Love is a door we shall open together." There is a sense of the old giving way to the new in the poem..... their feelings are romantic.
"...the crouched, parched heart like a tiger ready to kill...."
The heart is personified as tiger stalking its prey.
Passion is personified as "a flame's fierce licks under the skin."
