why do harris and jim find the task of scraping potatoes a difficult one ?

When they tried to prepare an iris stew Harris was assigned to peel the potatoes. But to him it was a big task.He couldn't peel the potatoes properly.All the potatoes were getting smashed and squeezed instead of peeled.Harris got tired of this business and thought that it would be better if they put the potatoes without peeling it.
