in chapter 8 we see bilbos character change from being the non adventurous, shy sort of fellow he was at the beginning. How does tolkien clearly show bilbo change in chapter 8?

Bilbo kills the giant spider without the aid of the dwarves or Gandalf's magic. Bilbo also has stopped complaining about being scared or away from the comforts of the shire.
