There are quite a few good quotes in The Good Earth related to honor.
How about "Hunger makes thief of any man", as an example of how honor is only present when people have enough food to eat?
Another section that has some decent quotes are when they start to sell the land, which represents status in the society - "If you sell the land, it is the end."
