Chaucer used words that were common to different social classes at the time. Bawdy humour and slang belonging to lower classes fit a particular tale. The Knight might use better English than say the Wife of Bath. This is a pretty big topic as word choice drives much of this poem. I'd take a look at the GradeSaver site for more.
