Why foes Shienbeck write using a specific dialect in chapter 2?
I think the dialect creates a connection between the reader and the setting. Steinbeck wanted to create a sense of realism that reflected Salinas Valley of California in the 1930's. Giving the men real accents also adds to the tone and mood of the novel.
