George and Lennie wish to be self -employed and self-sufficient. They wish to buy their own land and live quietly off it. This is seen in the dream which George recites to Lennie how they will "live off the fatta the lan'".

The idiom referes to the men acquiring the money to purchase their land. It means to collect enough money to provide the deposit for them to buy their oen place.
