Why would robbing Blum be a "real hold-up, in more sense than one"?

Bigger thinks they will perform "a real hold up" with a plan and steps to follow in the plan. THey would hold up a white man with money instead of blacks with little money. "Holding up" a white man is much more dangerous than holding up blacks, it carries grave consequences with it.
