Like Water for Chocolate

Esquivel describes Rosaura's "flatness, her flatulence, and her foul breath" (page 170). Why does the author focus on flatulence so often in the story?

I suppose it is a bodily function that is in line with food and a metaphor for certain emotions and personalities.
