Who or what is Dunny referring to when he says his “Madonna”?

Dunny's Madonna is Mrs. Dempster. While in battle in WW1, Dunstan is wounded. He sees a statue of the Holy Virgin Mary with Mary Dempster's face on it: Mrs. Dempster is his holy saviour.
