how do the animals perceive their level of freedom under the assumed leadership of Napoleon. is this perception accurate

This depends on where you are referring to in the novel. Initially the animals felt Napoleon gave them freedom under strong leadership. Squealer, Napoleon's PR (public relations) pig, kept a constant stream of propaganda and misinformation going. The animals certainly were not free, but they only felt free. I think this changes as the novel goes on.
